Vinification The vintage was very consistent and crop yields were low but fruit quality was excellent.
The cool harvest temperature slowed the accumulation of sugars and allowed us to hang the fruit longer and develop more varietal character.

Winemaking Fabulous deep colour and flavours for the 2007 Pinot Noir, reminiscent of the stellar 2005 Pinot Noir. This wine went through 18 months ageing with 100% French oak. The Pinot Noir completed full malolactic fermentation.

Aroma / Bouquet / Nose Aromas of black cherries and mild essence of oak. Palate of strawberry and cherry, followed by luscious, rich, creamy mouth feel lending to a long, full finish.

Food and Wine Pairing Cinnamon crusted pan seared duck breast with pinot noir cherry sauce. Absolutely delicious!
