Vinification The 2005 vintage was another great vintage for the Okanagan Valley.
Crop levels were down slightly but quality was very high.

Winemaking The Grapes for Ping were harvested very ripe at an average of 25 brix from premium vineyards in the Oliver area. The components were racked separately in predomenantly French oak and aged for 18 months. The blend is 69% Merlot, 20% Cabernet Sauvignon and 11% Cabernet Franc.

Aroma / Bouquet / Nose Our 2005 Ping is endowed with dark, ruby red and plum hues.
The nose highlights full berries and cherries with leather and vanilla.
A fruit forward entry is followed by firm tannins, mineral notes and dark currant.
The finish is very long and full.

Food and Wine Pairing Enjoy this wine with stews, red meats and stronger cheeses.
It is great on it's own as well!
