Vinification Cool fall weather delayed ripening which allowed us to extend hang time. The long hang time enhanced fruit character and colour, which is evident in this fruit forward, intense Shiraz.
These grapes were harvested on October 22nd at 24.6 Brix from our Bullpine vineyard located in Oliver.

Winemaking We fermented in small open top fermenters and conducted three punch downs per day to increase skin to juice contact.
The fermentation temperature was 20-29C. Rover was aged 18 months in oak; 60% in French oak, 40% was American oak.
To enhance the aromatics and ripe fruit of the Shiraz, 5% Viognier was blended in.
