Vinification The vintage was very consistent and crop yields were low but fruit quality was excellent.
The cool harvest temperature slowed the accumulation of sugars and allowed us to hang the fruit longer and develop more varietal character.

Winemaking This wine was barrel fermented for 35 days. It was then barrel aged for 8 full months in 100% French oak to add a smooth vanilla flavour.

Aroma / Bouquet / Nose Hints of pineapple combine with vibrant citrus notes to create a full bouquet. Essence of tropical fruits flood the palate for a substantial, round mouthfeel lingering to a soft, vanilla oak finish.

Food and Wine Pairing Tantalize your senses by pairing with a sauteed calamari or oysters Rockefeller. Also a sublime combination with a roasted game hen in a tomato butter sauce. For a lighter fare, try with a Chef's salad, antipasto and baked goat's cheese.
