Vinification The vintage was very consistent and crop yields were low but fruit quality was excellent.
The cool harvest temperature slowed the accumulation of sugars and allowed us to hang the fruit longer and develop more varietal character.

Winemaking This wine was fully stainless steel fermented for 25 days and cold soaked on its skins for 8 hours to add flavour and complexity to the wine.
|
Aroma / Bouquet / Nose A bouquet of rose petal and lychee flood the senses while the flavour profile consists of fresh and fruity tropical notes with good acidity and a touch of pepper on the finish.
|
Food and Wine Pairing Enjoy this wine with a meal consisting of mild heat and spice such as a chicken satay with spicy tomato and vegetable rice. Perfect with zesty lemon and seafood or try an arugula salad with fruity balsamic vinaigrettes. A perfect compliment to exotic, spicy flavours!
