Winemaking Gently crushed berries underwent 50% barrel fermentation to enhance flavour development in the finished wine. Malolactic fermentation was avoided to preserve the fresh fruit character. This wine was 60% barrel fermented in 30% new French oak, and then aged for 9 months in mostly new oak barrels with the balance in stainless steel tanks.
