Vinification The vintage was very consistent and crop yields were low but fruit quality was excellent.
The cool harvest temperature slowed the accumulation of sugars and allowed us to hang the fruit longer and develop more varietal character. The cool harvest temperatures were particularly kind to Pinot Gris and Chardonnay.

Winemaking Our 2007 vintage of Jimmy My Pal was fully stainless steel fermented for 20 days. The wine spent 8 hours in a cold soak on Pinot Gris grape skins to add to the luscious flavour. A crisp, lively blend of 34% Chardonnay, 33% Pinot Gris and 33% Semillon.
